The Price and Reward of Quality
If a diner doesn’t perceive the quality and taste difference of a fish that costs $80 a pound from a fish that costs $20 a pound, does it matter which fish is served?

I had the opportunity to eat at Saison in August 2011, just prior to the restaurant’s price increase. After 14 courses of fresh, innovative, and delicious food, I was happy to pay the bill. I felt my meal, with respect to the price I’d paid, was a good value.
